Hello,,
Im using profili Pro to create templates so i can cut them manually. I want to define the persentage of washout axe on the airfoil chord line, it is fixed around 25% of the chord line i think. Is there any way to change this value and make it 0% on the leading edge.

May be you mean swept-back, not washout...
You can define it in the first page of the wizard

Im attaching an image of the washout feature that i meant, it is already available in "Create a mold of the panel as a stl file" window.
But not found here in "General data and wing plan settings" so i can not change it when creating templates.

That option is not available for cutting templates, you can just correct it setting the right dihedral angle
